Rum has been distilled on the islands of the Caribbean since the 17th century as a welcome side-product of the sugar-cane industry making valuable use of the left-over molasses.

A 1651 document from Barbados states, "The chief fuddling they make in the island is Rum, alias Kill-Divil, and this is made of sugar canes distilled, a hot, hellish, and terrible liquor."

With refined methods of production and distillation along with careful ageing in oak barrels, rum has become a more sophisticated spirit for the discerning palate.
